Stomach
Reindeer eat a lot of lichen. Humans cannot digest lichens and some of them are poisonous. During cold phases when there was no plant food available for humans, partly digested lichens from reindeers stomach provided valuable vegetable food to balance the diet.

Offal
Many of the organs such as the liver, pancreas, kidneys, and heart are a good source of protein and fat. These may have either been eaten raw or cooked.
